These skewers are basically summer on a stick! So the chicken gets marinated in a mixture of coconut milk, papaya, lime, lemongrass, fresh ginger, jalapeño, a little soy and couple more ingredients. Papaya helps to tenderize the chicken and its probably best to describe these skewers as a mix of Hawaiian and Asian flavors. Its completely delish! Its kind of makes you feel like you sitting on the beach with Pina Colada in one hand and this chicken skewer in another… or something like that! Enjoy!

Tropical Chicken Skewers

Ingredients:

Marinade:

  • 3/4 cup unsweetened coconut milk
  • 2/3 cup fresh or frozen (thawed) papaya
  • 1 1 1/2 inch fresh ginger, peeled
  • 4 garlic cloves
  • 2 spring onions, roughly chopped
  • 1/4 cup soy sauce
  • 1 teaspoon asian fish sauce
  • 1 jalapeno pepper, seeded (use more if you like it spicy)
  • 2 lemongrass stalks, tender white inner bulbs, roughly chopped
  • Juice and zest of 1 lime
  • 1/4 cup fresh cilantro

Chicken Skewers:

  • 2 pounds boneless, skinless chicken breasts, cut into 2-inch cubes

Directions:

  1. Combine all the ingredients for the marinade in the food processor and pulse it to grind. Pour over the chicken, toss, and marinade for at least 4 hours and up to 24 hours in the refrigerator.
  2. Preheat grill on high heat. Shake off the marinade so it doesn’t burn during grilling. Thread 4-5 pieces of chicken onto each skewer.
  3. Place the skewers on the grill and cook for 8-10 minutes, turning frequently until done. The chicken is done when the juice that runs out is yellow rather than pink.
  4. Remove the chicken from the grill and place it on the plate. Remove the chicken from the skewers. Garnish with limes and fresh herbs. Serve immediately with grilled vegetables, rice or salad.
