Peach smoothie bowl

This quick and easy peach smoothie bowl with coconut milk makes for a healthy breakfast or snack! I love a good smoothie, but a smoothie bowl, loaded up with toppings? I am totally in for that.

For my smoothie bowl toppings, I used fresh blueberries, toasted pistachios, dark chocolate and broken pretzels ( kind of sweet and salty thing going on here), but you can always customize to your taste! Endless variations and such a lovely way to start a day! Enjoy!

  • 1 ripe peach, pitted and halved
  • 1/2 cup coconut milk
  • 1 tsp vanilla
  • Touch of lemon juice
  • 1 tablespoon honey or to taste
  • 6 ice cubes
  • Fresh blueberries, toasted pistachios, chopped dark chocolate and broken pretzels to garnish


  1. Warm up a frying pan and add a bit of coconut oil. Fry the peach halves for a few minutes until they are nicely caramelized. Let it cool a little bit.
  2. Blend first 6 ingredients at high speed in a blender. Taste and add more honey if needed.
  3. Serve with toasted pistachios, chopped dark chocolate and broken pretzels.
