This healthy, creamy Matcha Chia Pudding will keep you satisfied all morning! I served mine with fresh berries, pomegranate seeds and coconut shavings. You can also add some granola, nuts or seeds. Its so easy to make and I normally make several at the same time, so I have healthy breakfast ready to go in my fridge in the morning.

If you haven’t tried chia pudding, you are missing a wonderful healthy treat. Hope you’ll give it a try!

Matcha Chia Pudding

  • Servings: 2
  • Time: 10 minutes
  • Difficulty: easy

Ingredients:

  • 3/4 cup coconut milk
  • 3 tablespoons chia seeds
  • 1/2 teaspoon matcha powder
  • 1 tablespoon agave nectar
  • 1 teaspoon vanilla
  • 1 ripe banana mashed

To serve: fresh berries, coconut shavings, pomegranate arils

Directions:

  1. To make the chia pudding, combine all the Chia Pudding ingredients and stir well. Leave in the fridge for 4 hours or overnight.
  2. Top with fresh berries, coconut shavings and pomegranate seeds.

    Will this work using light coconut milk?

      Yes, it will work with light coconut milk. You can also use almond or cashew milk, pretty much any milk will work.
