Lime Coconut Chicken Burger

 

When we lived in India, we traveled throughout Asia quite frequently and were able to taste and experience the cuisines of many different countries from China to Sri Lanka. Since we have been back, I have been looking for ways to combine these tastes to create something new.

This chicken burger takes inspiration from southeast asian flavors that I absolutely love, including a tropical bounty of ingredients like lime and coconut and enhanced with garlic, chilis, fresh ginger and soy sauce. I marinaded the chicken overnight and then grill it to perfection, but if you don’t have a grill, you can sear the chicken in a pan first and finish it in the oven at 400 F. This sandwich is perfect for your next picnic or backyard barbecue. The sandwich is a medley of sour, spicy, salty and sweet. I served it with sliced avocado, sriracha mayo, pickles and red cabbage slaw.

Lime Coconut Chicken

Ingredients:

  • 1 pound boneless, skinless chicken thighs
  • 1 (14 oz) can coconut milk (not light), divided

Marinade:

  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 1/2 teaspoon ground turmeric
  • 1-2 tablespoons chili garlic sauce or to taste ( or use 2 garlic cloves + 1 jalapeno pepper, seeded)
  • 1 teaspoon fresh ginger, grated
  • Juice and zest of 1 lime
  • 1 teaspoon brown sugar, packed
  • salt and freshly ground black pepper, to taste

Directions:

  1. Combine all the ingredients for the marinade in the food processor and pulse it to grind. Pour over the chicken, toss, and marinade overnight in the refrigerator.
  2. Preheat grill on high heat. Oil the grill. Place the chicken on the grill and cook for 8-10 minutes, turning few times until done. The chicken is done when the juice that runs out is yellow rather than pink.
  3. Remove the chicken from the grill and place it on the plate.

 

Red Cabbage Slaw

Ingredients:

  • 4 cups red cabbage, thinly sliced
  • 2 green onions, chopped
  • 1/3 cup red bell pepper, diced
  • 1/3 cup carrot, grated
  • Juice and zest of 1 lime
  • 1/2 cup coconut milk (not light)
  • 1 tablespoon agave nectar or honey
  • salt, pepper to taste

Directions:

  1. In a medium bowl combine cabbage, onion, red bell pepper, and carrot. Whisk together lime juice and zest, coconut milk, agave nectar, salt and pepper. Drizzle the lime coconut dressing over the cabbage mixture, tossing well, using part or all of the dressing. Note: cabbage is most ideal if it isn’t really cold otherwise the coconut oils set up.

 

Garnishes and Assembly suggestions:

  • 4 sesame seed buns
  • Sliced avocado
  • Pickles
  • Sriracha mayonnaise (1/2 cup mayo+sriracha to taste)
  • Jalapeno chilis, sliced
  • Cilantro leaves

Spread sriracha mayo on both sides and assemble with sliced avacado, chicken and any other garnishes you would like to use. You can top it with red cabbage slaw or serve it on the side.
