This Hearty Everyday Salad is incredibly easy to make and most likely you have all the ingredients in your fridge or pantry. The ingredients in this salad are pretty much based on my own personal preferences and the leftovers I had in the fridge. I had some roasted chicken from the night before, some black rice and few other ingredients I grabbed from the fridge.
This hearty winter salad with black rice is tossed with apple slices, chicken, carrots, green peas, and currents. Topped with crunchy pepitas and blended with a flavorful, lemon mustard vinaigrette. I don’t think can go wrong with a big, colorful salad, jam packed full of healthy, hearty goodness. Enjoy!

Ingredients:

Salad:

  • 1 cup cooked rice (brown, wild, black); I used black
  • 1 cup rotisserie chicken, diced
  • 1/2 cup grated carrots
  • 1/2 cup peas; fresh or frozen (if frozen thawed)
  • 2 cups rainbow chard or baby spinach; I used rainbow chard ( thinly sliced)
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons red onion, minced
  • 1 small apple, cored and sliced into matchsticks
  • 1/4 cup currents or raisins, hydrated in hot water for 15 min
  • 1/3 cup toasted pepitas; toasted in a dry pan

Vinaigrette:

  • 2 teaspoon Dijon mustard
  • Juice of 1/2 lemon
  • 2 teaspoon agave nectar or honey or to taste
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper

Directions:

  1. Mix all salad ingredients in a big bowl.
  2. Whisk vinaigrette in a small bowl and adjust to your taste.
  3. Pour vinaigrette over the salad. Mix it and serve immediately.

    Fabulous salad Olga, I am not a big salad eater, wish I were, that said I do love salads that are creative and have interesting ingredients and this definitely qualifies. Wonderful!!

      Thanks Suzanne! I am not a big fan of a green leaf salad, but I do like a hearty salad with grains, roasted veggies and some kind of protein.
