Easy Apricot Breakfast Bread

I have been looking for a new breakfast recipe that is easy, healthy and tasty. I came across this recipe in my Vitamix handbook that sounded pretty good. The recipe is very easy, it takes less than 15 minutes to prepare all the ingredients and it’s a perfect addition to your breakfast routine.
The apricot bread turned out great! It was nice and earthy and moist and full of apricot and nut goodness! I really enjoyed the texture provided by the chunks of apricots and the pecans. I think I might just have a new favorite quick bread!

Easy Apricot Breakfast Bread

  • 1 cup whole wheat flour
  • 1 cup all purpose flower
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 1 orange, peeled, seeded, quartered
  • 1 large egg
  • 3/4 cup sugar
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla extract
  • 1 cup chopped dried apricots
  • 1/2 cup chopped pecans


  1. Preheat oven to 350°F. Lightly coat an 8 1/2-inch x 4 1/2-inch loaf pan with cooking spray.
  2. Combine flours, baking soda, baking powder and salt in a medium-sized mixing bowl. Set aside.
  3. Place water, orange, egg, sugar, vanilla and butter into the blender and blend for 30-60 sec or until smooth.
  4. Pour batter into bowl containing dry ingredients and mix gently to combine. Fold in apricots and pecans, do not over mix.
  5. Spread the batter into the prepared pan. Bake for 50-60 min or until a toothpick inserted in the center comes out clean.
  6. Allow to cool completely before slicing.
