Cranberry Coffee Cake

Cranberry Coffee CakeThis easy cranberry coffee cake made with greek yogurt, cranberry sauce and has a crunchy nut topping. I also added in a little orange zest to compliment the cranberries, they go very well together. Easy, delicious and moist cranberry coffee cake that is perfect for dessert, breakfast or brunch!

Cranberry Coffee Cake

Ingredients:

Dry:

  • 1 & 3/4cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet:

  • 1/4 cup melted coconut oil or vegetable oil
  • 3/4 cranberry sauce (homemade or canned); I used canned
  • 1 egg
  • 1/2 cup plain greek yogurt
  • 1 tsp orange zest
  • 1/4 cup honey
  • 1 tsp vanilla

Topping:

  • 1/3 cup walnuts, chopped
  • 2 tbs butter, melted
  • 2 tbs brown sugar, packed
  • 1 tsp ground cinnamon

Directions:

  1. Preheat oven to 350F and spray a 9 inch round cake pan or 8×8 square baking dish.
  2. In a large bowl, whisk together the dry ingredients. Set aside.
  3. In a medium bowl, whisk together the wet ingredients. Slowly add to the dry ingredients and stir together until just combined.
  4. Mix the topping ingredients.
  5. Spoon the batter into prepared baking pan, sprinkle the nut mixture and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let it cool.
